DAY 3 - QUICHE

Welcome to BEA-Utiful Kitchen.

The recipe for this week seems more complicated and elaborate ... but it really easy, believe me. You only have to follow the steps and practically the oven will work hard!! The ingredients are not that expensive, each quiche cost £ 4.50.

The second time I came to London (to visit in 2007) I stayed with my great friends Helena and Nico. Nico is French, a great host and he cooked me a wonderful leek quiche. I was excited and surprised. Without hesitation I wrote the recipe and still have it. From that moment, "the quiche by Nico" became an indispensable food in my diet... so, the tiny paper returned to London with me. I am very happy to post this recipe this week just as important for them. And dedicate it to a new tenant in this crazy world: Flora. She will get tired eating quiche made by her father ... I'm sure she will be as a fan of Nico´s quiche like me.

And now, the ingredients. I have made two quiche, one for vegetarians only with leek and anotherwith bacon (that is the typical "quiche Lorraine"). For both the pastry and the mixture is the same. And the great thing about quiche is that you can put whatever you want inside because it's always good. You need:

-3 Leeks / or bacon
-3-4 Eggs (3 to 150ml)
- Cheese
- Mustard
-Double cream (300 ml, 150ml used for each)
-Flour
-Butter / Olive Oil
-Short crust pastry
-Salt
-Pepper
-Oven Paper

You can put the double cream directly with leek or bacon in the pan and gently fry, they will catch more flavor. The double cream is very cheap in Tesco £ 0.89

I used mild cheddar cheese because it is much cheaper (360 gr. in Iceland for £ 2. I used half for each quiche) and also it melts very well in cubes. But you can use you whatever cheese and previously grate it. The ideal is the Gouda cheese. If you prefer butter instead of olive oil… use it, I always prefer oil because it is healthier.

The secret touch is spread mustard on the basis of pastry. So, do not forget!

And remember they are 30 minutes at 170 degrees in the oven.

My favorite quiche is with leeks and smoked salmon. For me it is the best combination. Try to put different ingredients to your taste and you can tell me yours.

Enjoy! And Bon Appetit !! (Today more than ever)

¡¡AHORA EN ESPAÑOL!!

Bienvenidos a BEA-Utiful Kitchen.

Probad a ponerle diferentes ingredientes y me vais contando.

Que lo disfrutéis y Bon Appetit!! (Hoy más que nunca)
